Lemon Blueberry Bread
- 2/3 cup butter, softened
- 2 cups sugar
- 4 eggs
- 2 tablespoons grated lemon peel
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 3 cups flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 1 cup blueberries
Glaze
- 1 1/3 cup powdered sugar
- 2 to 4 tablespoons lemon juice
In a large mixing bowl, cream butter and sugar. Add eggs, mix well. Add lemon peel, juice and vanilla. Mix until combined. Combine the flour, baking powder and salt. Add to creamed mixture alternately with milk. Fold in blueberries.
Transfer to two greased loaf pans. Bake at 350 for 50-55 mintues or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire rack.
Combine glaze ingredients. Drizzle over warm bread. Cool completely. Slice and enjoy!
